WHere is a simplified interpretation of a drink from our latest drinks list. This is a party-sized pre-mixed that is bursting with the flavours of a Christmas time, making it ideal for hosting a celebration. Save the extra cordial to use in morning drinks, desserts, or for more rounds of bikinis.
Bikini
Yields 10 people
For the Clementine Cordial (produces 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g caster sugar
For the Drink (produces 850ml, enough for 10)
400ml decent vodka
100ml London dry gin
150ml peach schnapps
200ml clementine syrup (as made above)
A few cranberries, for garnish
Mandarin essential oil, as a final touch
Method
To prepare the Cordial: Put all the components into a pot, bring to a light boil, agitating until the sugar dissolves. Next, remove from the burner and leave to cool down fully. Pour into a sealable bottle, seal and refrigerate it in the refrigerator, it can be stored for about a month.
Preparing the Premix: Mix all the liquid ingredients into one sizeable container, leave to sit for one hour, then strain preferably using muslin, making it perfectly clear.
For serving: Add 85ml from the premix to a cocktail shaker containing ice, gently stirring carefully for about 60 seconds to chill. Filter to a cold coupe glass or a similar vessel, top with the cranberries and finish by giving it a quick spritz with the mandarin essence over the drink.
